Lamb may be purchased as sides, or you may wish to buy a whole lamb. Sides include the shoulder, the loin and the leg with various options available for each. Cost is calculated from the bone-in weight (hook weight) prior to processing. Cuts come packed in bags and labeled. They are generally not meal sized so have some freezer bags handy.
